Let's be very clear - I am not now, nor have I ever been a cook. It's just not how I was made. My sisters are accomplished cooks. I...well...I am an accomplished eater! That being said, I occasionally come across a recipe that meets my lowly cooking requirements - 1.) easy 2.) easy & 3.) tastes good. This is even made in the microwave! I give you "Easy Peasy Chocolate Peanut Butter Fudge":
Ingredients:
• 3 1/2 cups powdered sugar
• 1 cup creamy peanut butter (other nut butters should also work as long as they aren't very oily)
• 1 cup butter (I prefer the "good" stuff & none of that icky margarine!)
• 1 cup chocolate chips (I prefer semi-sweet, but milk or dark should work, too)
• 1 tsp vanilla
Directions:
• Combine the peanut butter & butter in a bowl & microwave for 1 - 1/2minutes. The butter should be completely melted & the peanut butter very soft.
• Add 1 tsp vanilla and mix well.
• Mix in the powdered sugar one cup at a time, making sure to blend out as many "lumps" as possible. (The batch I made was for our house only, so I didn't get too concerned about the lumps!:)
• Grease an 8" or 9" pan or line with parchment paper.
• Pour the peanut butter mixture into the pan and smooth.
• Melt 1 cup chocolate chips in the microwave. Melt and stir in 30 second intervals until smooth.
